
Friends, it’s no surprise that most of us aren’t getting the recommened amount of veggies a day. When my health practitioner asked me to make sure I was getting (at minimum) 5 servings of vegetable a day I was like uhhh ok? The truth is I’m not always jazzed about a salad, so I was left wondering how to get all these vegetable in.
While some days yes, I will have a salad for lunch and knock those servings right off, my favorite way to get them in is with a green juice. My family gave me a juicer for Christmas a few years ago and I have been a juicer ever since.
If you haven’t tried a green juice yet, you might be thinking gross, no way. But stick with me here. I promise you the lemon and apple sweeten this up just enough to make it taste like juice and not just a pile of vegetables. It’s thin like water, not thick like a smoothie.
To be clear I drink these juices in addition to a meal, usually breakfast or lunch. I’m pretty sure I’ve said this before, I am not a ‘skip a meal’ kind of person. I need food to keep my energy up. Oh and speaking of energy, I notice my energy levels go up every time I drink one of these juices AND my skin is glowing.
The energy boost should come as no surprise, this juice is packed with vitamins and minerals. Celery reduces inflammation and is great for alkalizing blood.. Romain is high in calcium, magnesium and vitamins C, K, and folate! Lemon is high in vitamin C and is also great for alkalizing. Ginger is an anti-inflammatory and may help lower blood sugar and cholesterol levels. Turmeric is an anti-inflammatory and contains curcumin (google the benefits!). Cucumbers contain antioxidants and granny smith apples are high in vitamin C.
Honestly the hardest part about juicing is keeping the fridge stocked with enough veggies and the clean up. You will need a juicer, I linked the Breville one I use below and it’s been going strong for three years. There are plenty of newer versions that are easier to clean, I linked a few of those as well, but I can’t speak from experience on how well they work.

Green Juice
Equipment
- Juicer
Ingredients
- 1 organic cucumber
- 1 organic granny smith apple
- 1 organic head of Romain
- 4 organic stalks of celery
- 1 organic lemon peeled
- 1 inch ginger
- 1 inch tumeric optional
Instructions
- Wash and dry all ingredients.
- Cut the apple into quarters.
- Peel and cut the lemon.
- Cut the bottom off the celery stalks.
- Cut the cucumber in half lengthwise.
- Follow the instructions on your juicer and add each ingredient. It's best consumed right away. I like to add a little ice to mine on really hot days. Enjoy!
