
I’m about to share with you one of my easiest, healthiest and favorite breakfasts…avocado pudding. Let me start by saying I am NOT a “I can skip breakfast” person and a piece of fruit just isn’t enough. I need fat or protein to keep me full until my mid morning snack. So if you’re like me, you are going to love this light breakfast that will also keep you full.
Avocados are high in healthy monounsaturated fats, which can keep you full longer and can reduce your chances of heart disease. Plus they have 20 vitamins and minerals PER SERVING!
I ate this breakfast every day a few years back when I was going through yoga teacher training and recently brought it back into the rotation. I’m so glad I remembered it!

ingredients
1 avocado
2-4 tsp honey (raw and local is best)
1/2-1 cup almond milk (or milk of choice)
Cut and remove the seed of the avocado. Scoop it into a blender. Add 2-4 tsp of honey, I like mine a little sweeter so I go with 4. Then add 1/2 cup- 1 cup milk of choice. I like mine a little thicker so I do 1/2 cup milk. 1 cup is great too it just makes it more like a smoothie, less like pudding. Blend for a few minutes until smooth.
You can top it with cacao nibs, fresh fruit or eat it as is. Truth be told I topped it with cacao nibs for this photo and regretted it when I ate it. Ha, I like to keep it real with ya’ll.
